Apply online The Bacterial Synthetic Biology section at the Novo Nordisk Foundation Center for Biosustainability is seeking a talented microbiologist for the development of sustainable food for the future. Currently food production for human’s accounts for about 35% of all global greenhouse gas emissions, takes up 38% of the earth’s landmass and requires 70% of global fresh water. While this is already unsustainable, the demand for food is growing with the population of the earth. We envision to reduce the carbon footprint, land- and water-use as well as factory farming by creating novel foods based on microbial biomass. As one third of the annual food production is either lost along the production chain or ends up as food waste (1.3 billion tons of food waste/year) we want to utilize food waste as input material to value the resources that stand behind the wasted products and to increase the sustainability of our novel foods even further. Microbial foods offer exciting opportunities, not only for the benefit of the environment and animal welfare, but also to modulate human nutrition tailored to improve human health. We work in an interdisciplinary team with a lot of creativity, enthusiasm and motivation to make an impact on the food production of the future. The specific project aims to explore microbial communities with synergistic effects on waste degradation and nutritious microbial biomass production.
